The small but fine winery, authentic wines cultivated and cared for in the vineyard, matured naturally in the cellar, our wines need a lot of time to mature, which they can still have with us!
Andreas Neukomm, winemaker and wine technologist, accompanies the vines from pruning to harvesting and, beyond that, the pressing of the single-vineyard wines from 3 different Pinot Noir sites to date.
The red wines are fermented spontaneously in wooden cuves and matured in barrique barrels of different ages. The maturation of the Cabernet Jura grapes in clay amphorae gives their own flavours, which complement the Cuveé Bürgerwy perfectly.
The philosophy of the winery is to produce in a way that conserves resources and is close to nature.
We are supported by our son Elias Neukomm, who has taken the same professional direction.
He initiated the idea with a cider made from apples from high trunk trees and the sparkling Pet Nat with the rosé and the Sauvignac, a new white wine variety in organic quality.
